450g strong wholemeal flour
1tsp Bread Soda
2tsp Light Brown sugar
30ml Butter milk
20g unsalted butter
Pre heat the oven to 200c.
Place all dry ingredients into a bowl, make a well in the middle and pour in the butter milk.
Mix by hand until combined. Create a “claw” with your hand and twist it around in the bowl until all dry ingredients are combined.
Turn on to a floured baking tray or a lined loaf tin. Make a cross on top on the bread with some flour and then score with a knife.
Bake for 40 minutes.
With 10 minutes to go in the baking melt about 20g of unsalted butter. When the loaf comes out of the oven it should have a hollow sound when tapped on the base. Place the loaf on a wire rack and brush the melted butter on the top. Allow to cool.
This is an extremely versatile recipe. You could use all strong white flour for a white soda bread, you could use half wholemeal flour and half strong white to create a nice mix. You can also use any and all manner of fillings for example seeds, nuts and even grated cheese.
